Tibetan & Modern flavors mixed in Lhasa's 5-star hotel St. Regis

Lhasa's first five star hotel, the St. Regis, opened last winter. As the only five star hotel in the whole of the Tibet Autonomous Region, the hotel has not only brought tourists from all over the world, is has also attracted a group of international staff, who are eager to experience Tibetan culture.

28-year old Edwin Loh from Malaysia serves as chef manager at the St. Regis. He is in charge of all Tibetan, Chinese and foreign cuisine served at the hotel. As an experienced chef himself, Edwin used to work in Dubai and Singapore, but handling traditional Tibetan food has become a new experience for him.

He has been working hard to get the essence of Tibetan cuisine with his own understanding, trying to create a special combination of authentic Tibetan food and international flavor. Edwin Loh, chef manager, said, "We started to try out different Tibetan meals."

Before landing in Lhasa, Edwin also worked in Hainan and Hunan province. The high elevation of Tibet never deferred his Tibetan dream. But at the very beginning he suffered severe altitude sickness. Over time, he got used to it and is now more determined than ever to make the restaurant a success.Edwin Loh said, "We are the first Tibetan restaurant to combine other western and modern elements."

However, in Edwin's mind, Tibetan cuisine may need to add some modern flavors to attract a larger group of diners both domestically and internationally, but the essence of the Tibetan meal should always be authentic and pure. That is the reason why on his menu, more than 70-percent are Tibetan dishes, and more than one-fifth of his team are local Tibetans.
