Cactus: A prickly yet eatable plant

The succulent cactus plants seem to be an inseparable part of local life in Mexico. For one thing, it's the national flower of the country, symbolizing Mexican nationalism and its indomitable spirit. You can also see it on the national flag. There's even a cactus festival.

Cactus is perhaps one of the most vigorous plants on earth. It can survive in stony meadows and dry scrub regions.

In Mexico, cacti have survived for more than 20-thousand years.

The plants come in various shapes and sizes. In the central part of Mexico, some of the cacti can reach as high as four meters.

The prickly appearance of a cactus might make you feel a bit stand-offish, but what's hidden inside the spine-like leaves is surprisingly delicious, making it a must-try on your list of Mexican foods.

Apart from being a major course on a local dining table, cacti can also be used as fodder, forage, and featured in daily necessities like shampoo and detergent. And there are also drinks and wines made from this plant.

A Cactus Festival is held annually in San Martin of Mexico. The week-long event this year is highlighted by the area that focuses on the eatable nature of the plant. Many food aficionados try their luck in inventing their own beautifully designed cacti-centered dishes, overwhelmed by mouthwatering crowds from across the nation.
